Flavor Lab is changing things up for October.

For Vol. 3, Secret Spoon Society is joining forces with Garrison Goodies and stepping away from the cocktail glass for an afternoon devoted to chocolate, wine, and curiosity.

We’ll begin by tasting three different styles of chocolate, each paired with a complementary red wine. We’ll explore how sweetness, bitterness, texture, fruit, spice, and richness interact, and how something as simple as changing what’s in the glass can completely change what you taste in the chocolate.

Then the lab opens.

Each guest will create their own Dubai chocolate bar, beginning with the familiar combination of chocolate, pistachio, tahini, and crisp kataifi before deciding where to take it next.

And this is Flavor Lab, so there will be options.

Some will make immediate sense. Some will require a little curiosity. Others may sound like they have absolutely no business anywhere near a chocolate bar.

We’re keeping those details to ourselves for now.

Taste. Experiment. Ask questions. Follow an idea. Change your mind. Build something entirely your own.

There is no prescribed combination and no perfect bar waiting at the end. The point is to explore what happens when familiar flavors meet unexpected ones and discover what works for you.

You’ll leave with your own creation, perhaps a new favorite combination, and almost certainly an opinion about something you never expected to put in chocolate.
