Ingredients
- 1/3 cup butter, melted
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon butter flavored extract
- 1 teaspoon baking soda
- Dash salt
- 1 1/2 cups flour
- Zest of one orange (1 Tablespoon)
- 3 ripe bananas, mashed
- 1/2 cup strawberries, roughly chopped
- 1/2 cup blueberries
Method
Preheat oven to 350°. In large bowl, combine bananas and butter. Add sugar, egg, and vanilla. Stir. Add baking soda and salt. Stir to combine. Add flour and stir gently, just enough to blend ingredients. Fold orange zest, strawberries and blueberries gently into mixture. Butter 4×8 inch loaf pan. Butter a piece of parchment paper. Line the bottom of the pan with parchment paper (butter side up). Pour batter into pan. Bake for 1 hour until top is golden brown. Remove. Cool slightly before serving.
