Bright, refreshing, and lightly herbaceous, this cocktail offers a fresh take on a warm-weather favorite. For a mocktail version, simply omit the vodka.
INGREDIENTS

2 fresh strawberries, sliced
1 oz. vodka
¾ oz. fresh lemon juice
½ oz. simple syrup (or honey syrup)
2–3 fresh thyme sprigs, plus more for garnish
2–3 oz. chilled sparkling water or club soda
ice
strawberry or lemon wheel, for garnish (optional)
METHOD
In a cocktail shaker or sturdy glass, gently muddle the sliced strawberries with the simple syrup and one sprig of thyme to release their flavor. Add the vodka, fresh lemon juice, and ice, then shake well until chilled. Strain into a glass filled with fresh ice, top with sparkling water or club soda, and stir gently to combine. Garnish with a fresh thyme sprig and a strawberry or lemon wheel, if desired, and serve immediately.
