Watermelon Pico

INGREDIENTS

  • 1/2 whole small seedless watermelon, diced
  • 1/2 whole red onion, diced
  • 1 whole red bell pepper, seeded & diced
  • 1 whole green bell pepper, seeded & diced
  • 1 whole yellow bell pepper, seeded & diced
  • 2 whole jalapeños, seeded & finely diced
  • 1 bunch cilantro, roughly chopped
  • Juice of 2 limes
  • 1/2 teaspoon salt
  • Chips for serving

METHOD

Add all ingredients to a large bowl. Stir gently to combine. Taste and add more salt and lime if needed. Serve with chips. Also tasty as a topping for fish and chicken.
