INGREDIENTS
for the chicken
1 lb. chicken tenders or small chicken breasts
1 cup buttermilk
1 cup flour
½ cup cornstarch
1 teaspoon paprika
1 teaspoon garlic powder
salt & pepper
oil, for frying
slider buns
sliced pickles, for topping
for the hot honey
½ cup honey
1–2 teaspoons red pepper flakes
for the pickle slaw
2 cups cabbage, shredded
¼ cup dill pickles, chopped
2 Tablespoons pickle juice
2 Tablespoons mayo
1 teaspoon Dijon mustard
METHOD
Marinate chicken in buttermilk for at least 30 minutes. In a bowl, mix flour, cornstarch, and seasonings. Dredge chicken and fry until golden and crispy. Warm honey and stir in red pepper flakes to create hot honey. Toss slaw ingredients together until combined. Assemble sliders with crispy chicken, a scoop of pickle slaw, sliced pickles, and a drizzle of hot honey.
